The detailed syllabus of dairy process technology laboratory is as follows. <\/p>\n<p>  <title>Dairy Process Technology Laboratory<\/title><\/p>\n<h4>Course Objective:<\/h4>\n<p align=\"justify\">\n  The course aims to<\/p>\n<ul>\n<li>learn about the preservation and analytical techniques in milk and milk products<\/li>\n<li>educate about the use of various techniques in milk product processing and quality analysis<\/li>\n<\/ul>\n<h4>List of Experiments:<\/h4>\n<p align=\"justify\">\n<ol>\n<li>Sampling, chemical and microbial examination of pasteurized, sterilized and UHT processed milk.<\/li>\n<li>Determination of viscosity, density and specific gravity of milk<\/li>\n<li>Detection of adulterants and preservatives in milk.<\/li>\n<li>Batch and Continuous pasteurization of milk &#8211; study on Different controls on pasteurizer and Different sterilizers<\/li>\n<li>Determination of the rate of filtration and settling<\/li>\n<li>Study of construction and operation of Vacuum pan, Double effect evaporator, Spray dryer, Vacuum and atmospheric drum dryers.<\/li>\n<li>Study and operation of Butter, Ghee, Ice-cream and cheese making equipment,<\/li>\n<li>Study the Reverse Osmosis and Ultra filtration system<\/li>\n<li>Determination of water activity and sorption isotherms of milk products.<\/li>\n<li>Determination of thermal load during retort processing of milk and milk products<\/li>\n<li>Determination of Functional properties of powders<\/li>\n<li>Determination of degree of browning-chemical\/physical methods.<\/li>\n<li>Freeze drying of milk\/milk products, and heat sensitive products.<\/li>\n<li>Homogenization of milk and its efficiency determination.<\/li>\n<li>Production of probiotic food products<\/li>\n<li>Fermentation using enzymes-Cheese production<\/li>\n<\/ol>\n<h4>Course Outcome:<\/h4>\n<p align=\"justify\">\n  At the end of the course the students will be able to<\/p>\n<ol>\n<li>gain knowledge of platform test in dairy processing.<\/li>\n<li>understand the manufacturing processes of milk and milk products and the equipments used<\/li>\n<li>gain knowledge of functional properties.<\/li>\n<\/ol>\n<h4>Text Books:<\/h4>\n<p align=\"justify\">\n<ol>\n<li>Ananthakrishnan, C.P., and Sinha, N.N., &#8220;Technology and Engineering of Dairy PlantOperations, Laxmi Publications, New Delhi, 1987.<\/li>\n<li>Warner, J.N., &#8220;Principles of Dairy Processing&#8221;, Wiley Eastern Pub.
